Coonawarra Cabernet Sauvignon

The CPV Cabernet Sauvignon displays good dark cherry characters, together with a slight oak complexity. Medium intensity that reflects the regional Cabernet Sauvignon fruit rather than strong oak.

Winemakers Comments
The Cabernet Sauvignon was harvested in early April at optimum ripeness. The grapes were crushed and fermentation took place in small static 7 tonne fermenters. After 10 days on skins the wine was pressed and aged for 18 months in a mixture of small oak barrels. After blending, the Cabernet Sauvignon was bottled and aged for six months prior to release.
